 Sealing ring: This is the silicone ring on the inside of the lid. Coco Morante in "the Essential Instant Pot Cookbook" (Ten Speed Press, $19.95) says the ring lasts 6 to 18 months. Morante also writes that she keeps " … separate sealing rings for sweet and savory foods because the ring can retain strong odors." $9.99 at Bed Bath and Beyond.

Glass lid: Tempered glass lids are good for slow-cooker setting so you can see the food in the pot. The Instant Pot brand 9-inch lid is $14.95 list price on Amazon.

Round cake pans and casserole dishes: A 7-inch round springform pan for cheesecakes; 7-inch cake pans; and 1 1/2 quart souffle or ramekins that will fit inside. Large capacity Instant Pots can hold larger sizes. Always measure and check to see if the pan or dish fits. Prices vary at big box retailers to kitchen shops.

 Mini silicone oven mitts: You can use any oven mitts, but Daniel Shumski in "How to Instant Pot" (Workman, $16.95) recommends the miniature ones writing that they are " … particularly handy for safely gripping the lid of the very hot inner pot." $8-$15 at Bed Bath and Beyond.

 Steaming baskets: You can use expandable metal steamer baskets, silicone or wire mesh. $6-$12 at Target.
