Upside-down Pizza Casserole

Is there anyone who doesn’t love pizza? This casserole takes the flavors and turns them on their head. You could certainly add pepperoni, swap sausage for the ground beef or add vegetables to create your favorite pizza flavors.

One of the great things about the recipe is you can keep the ingredients on hand for two or three weeks – ground beef in the freezer, of course. Put ground beef in the refrigerator to thaw in the morning and pull this dinner together in just minutes later in the day. If the ground beef hasn’t completed thawed, it will just take an extra minute or two to cook in the first step of this recipe.

Cut the calories, fat and sodium by using part skim milk mozzarella, reduced fat refrigerated biscuits and low-sodium marinara sauce.

Upside-down Pizza Casserole

Total time: 25 minutes

Serves: 6

1 1/2 pounds lean ground beef

1 (24-ounce) jar marinara sauce

1 1/2 cups (about 6 ounces) shredded mozzarella

1 (10-ounce) package refrigerated biscuits

Preheat oven to 400 degrees. Lightly grease 2-quart baking dish.

In a large skillet, cook ground beef until no longer pink, about 5 minutes. Drain off fat. Add marinara sauce and combine thoroughly. Transfer mixture to prepared baking dish, sprinkle with mozzarella and top with biscuits. Bake 15 minutes or until biscuits are golden brown.

Per serving: 605 calories (percent of calories from fat, 60), 31 grams protein, 29 grams carbohydrates, 2 grams fiber, 39 grams fat (16 grams saturated), 110 milligrams cholesterol, 1,132 milligrams sodium.
