Recently, Wanderlust Coffee Co., Atlanta's local cold brew company, began making nitrogen-infused coffee or "nitro coffee." The process involves brewing coffee for over 18 hours in small batches, using roasted beans from Octane. By cold brewing coffee, its true flavor can shine through, yielding a smooth drink with lower acidity than traditional coffee. After, a kegged batch of cold brew is infused with nitrogen under high pressure. By saturating the coffee with nitrogen gas, the beverage develops small bubbles and a slightly effervescent texture, similar to a nitro-stout beer. All of this is done by Alden Eavenson, Wanderlust's founder.

These cold brewed coffee kegs are now being served on tap at Octane Coffee Westside and Porter Beer Bar.

Bon Appetit named nitro coffee as a top "trend to watch" for 2015.
