BrOkn' Egg Bistro opening in Duluth next month, celebrating with $2 brunch dishes

Duluth is about to get a new spot for brunch.

BrOkn' Egg Bistro is set to open its doors June 5 at 4601 Satellite Blvd, Suite 7 in Duluth.

Executive Chef Terry Sargent described the concept as "chef-inspired brunch."

"It's modern cuisine using gastronomic techniques," he said. "We wanted to bring that type of restaurant to Duluth."

The menu will include a variety of breakfast and lunch items including creme brulee Irish oatmeal; The Fat Elvis, a bacon waffle with brulee bananas, bourbon bacon syrup and peanut butter foam; and Country Shrimp n' Grits with roasted tomato buerre blanc.

Though alcohol won't be served at first, Sargent hopes to be able to serve cocktails and other drinks soon.

Sargent, who also owns and operates catering business The Cuisson Company, says he sees the blueprint for BrOkn' Egg as mirroring that of Sun in My Belly, the popular brunch spot that started out as a catering company.

To celebrate opening day, all dishes will be $2 from 7 .a.m-11 a.m., and the restaurant will offer entertainment, games and a tour of its kitchen and event space.

Regular hours will be 7 a.m.-3 p.m. Tuesday-Sunday.
