"Most members of my family are chocoholics. I don't know who created or found the first recipe. We are all originally from Ohio, and of course there are the Ohio State Buckeyes, " Koob says.
"My older sister, Maria, prepares the buckeyes. When you go home for Thanksgiving, she prepares enough with her son Eli to last through the holidays."
Extras go in the freezer for midnight raids.
"The running joke in my family is that I'm too professional to make buckeyes, " Koob says. "I get too technical."
So Koob busies herself with other tasks in the kitchen and lets everyone else make the buckeyes. Even pastry chefs get a holiday.
"While I'm doing one thing, my sister and nephew and sister-in-law and nieces are all rolling buckeyes. That's really what's most fun about it, in the kitchen when we're all together, " she says.
Makes 46 cookies
Preparation time: 20 minutes, plus 1 hour freezing
Cooking time: 1-2 minutes
1/2 cup (1 stick) butter, room temperature
1 cup creamy peanut butter
2 cups confectioners' sugar
6 squares semisweet chocolate, coarsely chopped or 6 ounces chocolate chips
1 square unsweetened chocolate, coarsely chopped
With an electric mixer, cream the butter, peanut butter and confectioners' sugar until smooth. Form into medium/small balls and place on a cookie sheet. (If balls are too sticky to work with, they can be refrigerated until more firm.) Freeze for 30 to 45 minutes or until balls are firm.
Over a double boiler or on low in the microwave, melt both of the chocolates together.
Using a toothpick in the center of the frozen peanut ball, dip into the chocolate, leaving the very center uncoated to establish a two-tone authentic buckeye. Place dipped buckeyes on another cookie sheet lined with wax paper and allow to set up in the freezer for 20 to 30 minutes, or until set and chocolate is firm to the touch.
