Most of us use our grills for burgers, steaks and chickens, foods that don't call for a lot of gadgets. If you're cooking delicate foods like vegetables and seafood or grilling pizza, there's an array of gear, some of it useful, some not. Here are a few introductions worth checking out if you often cook the kind of food they're designed for.
Mesh Grill-Top Chef's Pan: Think grill pan, but with deep sides and a cover. The upside: You can shake the pan without worrying about items falling out and through the grill grate. The downside: Depending on the size of your grill, you won't be able to close the cover because of the pan's long handle. Don't overfill the basket or you'll slow cooking time. $49.95, Williams-Sonoma.

Mario Batali Granite Piastra: A pizza stone for the grill, this 10-by-14 heavyweight is solid granite. One side is a raised grill surface; the other, a flat griddle. The piastra isn't available in the Sur la Table at Perimeter Mall, but can be ordered online. The store does stock Batali's red pizza stone, but it's twice the price. Bobby Flay Stainless Steel Sauce Pot: Lift the lid and there's a silicon basting brush; the wide lid shields hands from grill heat. Close the lid and a gasket helps seal tightly. If you're brushing the marinade on raw meats, make sure not to reuse it on cooked foods to avoid foodborne illness. $19.99, Kohl's.
