Chefs Supreme

With Alice Waters in town today to speak at the CDC, it dawns on me that she is without a doubt the most influential chef of her time. Julia Child came first, but then there was Alice.

From her restaurant Chez Panisse in Berkeley, Cal., she has inspired an entire generation of chefs to think and eat locally, making la cuisine du marche (market cuisine) a benchmark for American restaurants and spearheading the slow food movement in the United States. Waters inspired millions to think about what they were eating as much as how it was prepared.

What chefs in Atlanta do you feel best embody Waters’ iconic image? Who are our most influential chefs? Why?

I’m always impressed by Chef Micah Willix at Ecco and Chef Mark Alba at Food Studio. These are two of my favorite restaurants and their menus continue to evolve and impress.

It’s got to be that redhead at the Waffle House down in TyTy. She not only makes a strong brew of coffee but she also puts together a mean waffle.

How about Kevin Rathbun? He’s probably the best in Atlanta in my opinion.

This is a no-brainer question. The answer is: Anne Quattrano and Clifford Harrison, the owners of Bachanalia, Quinones and Floataway Cafe. Nobody else comes close.

Best Chef in Town? Well, guess that’d be me! (just a joke folks…don’t cut my head off!) I enjoy creating in the kitchen and my beau and friends like it when I do. Better control of ingredients, calories, and portions. The only restaurant In Town that I have eaten at was Nava … and I second the Kevin Rathburn nominee.

I definately think Kevin Rathbun, but I am also a big fan of Don Diem. Don has worked at Tom Tom, Noche, The Ritz, Blue Point and now is the executive chef at Dolce/Ten Pin Alley. That KNOWS how to do food! I do miss his Ancho Fried Chicken from Noche days tho!

Which chefs in Atlanta best embody Water’s…? Quattrano and Harrison are at the top of the list because of their long standing dedication to the use of local produce which goes back to the 90’s. There are newer chefs with the same focus but Q&H have been at it longer than others in Atlanta.
