How do you like your catfish?

This week’s Saving Southern Food recipe features catfish, but not of the fried-with-hush-puppies-and-coleslaw variety. Reader Donna Franklin, who grew up in Statesboro, has fond memories of eating catfish mulldown, an old-fashioned layered stew, with her family. The recipe actually inspired chef Linton Hopkins of Atlanta’s Restaurant Eugene to create his own citified version. Have you ever tasted or cooked catfish mulldown? What’s your favorite method of cooking catfish? Fried, baked or some other way? Do any restaurants in town do catfish particularly well?

I’ve not had catfish mulldown, but I am excited about trying RestoEugene’s version!

For my tastes, catfish is best when simple. Filet it. Throw it in some cornmeal, with maybe a little salt and pepper. Fry it.

That’s it - I guess, just like how I feel about grits, I’m a catfish purist.

Most restos make PASSABLE catfish, again at least to my tastes. Six Feet Under is OK - Collard Green Cafe is really good. Big Daddy’s (Cascade road) was good, but I’ve not been in a long time.

The best catfish was the kind fried up by my great-uncles during family fish fries for most of my life. Unfortunately, the primary cook died some years ago, and it’s never quite been the same. He made the only hushpuppies I ever really liked.

I don’t much like catfish in general. It always tastes dirty to me.

Lev 11 chapter- the Lord said not to eat anything from the sea or river that doesnt have fins and scales, Eating Catfish is an abomination to God.

Catfish has always been my favorite freshwater fish. I love to keep it simple too, just dip the fish in some cornmeal, salt and pepper, and pan fry it in hot grease. I prefer to eat catfish with lemon wedges rather than tarar sauce - that’s how my Granddaddy always served it. And I think they actually taste better with the bones in (just have to be careful!) And of course, don’t forget the hushpuppies and cole slaw!

I wanted to tell everybody that the best place for fired catfish if Bonner’s Restaurant in the Real Buckhead GA,it is 60 miles east of Atlanta but worth the drive. The fish are fresh served with homemade Hushpuppies and slaw. It is a family owned restaurant, with a rustic feel. It is way out in the country, great place!

I have to admit, the best catfish is at my house. I buy at Dekalb Farmers market fresh, steak cut head and tail removed. Puree fresh tomatoes, onions green and red peppers in a blender. Sautee on medium 10 min then add the catfish steaks and cook 15 min. Season with salt and pepper. Serve over Uncle Bens rice. Its real comfort food on a balmy day like today. Like Rachel Ray says, “Deeeelesssh”

Fried catfish is good but you need to try a catfish stew. Take a big pot and fry some bacon in the bottom. Then take the bacon out and save a little grease in the bottom. Then you take some sliced potatos, onions, and catfish fillets. Layer it all the way to the top and don’t forget to add the bacon in. Add some salt and plenty of black pepper and let it simmer on low for about an hour to an hour and half. Now that’s good eating.

My two favorites are both long gone: Rio Vista on Moreland just south of 285 and Paw Paw’s Country Buffett on Buford Highway. Both served whole (or more properly, beheaded) catfish, bones in. Simple, and though a tad greasy, good. Sounds like it is time for me to try Catfish Jim’s, Bonners and Neeley’s.

If you are ever in Barnesville, GA. You must go to the Country Kitchen Resturant. They serve the best coleslaw, Filet and Whole Catfish in middle GA. Catfish seasoned just right.

There is only one way to cook catfish. Fried whole in buttermilk and cornbread and crispy….no fillets. And tender and juicy in the center.

Paul: Thanks for the tip. We were in Covington Saturday for a softball tournament and gave Neeley’s a try. It was like coning home again. Fresh, on the bone, tender and perfectly fried. Although I only had the three catfish plate, you can get all you can eat for under $15. What a bargain!

My wife makes a delicious Cajun style blackened catfish. It’s spicy and juicy. I once only liked my catfish fried, but this is even better! You can find lots of recipes by googling “blackened catfish”.

The best catfish that I know is over at Catfish Hollow in Sharpsburg. The Wise’s do excellent Fried Catfish, Hush Puppies, and Slaw, and the service is second to none. My wife and I always ask for Frances as she always does such a jam up job of service.

I do have to put an asterisk beside the best. I have had to place that were better. The Rio Vista on Moreland (God rest its soul) had better Catfish and Chicken, but alas the service was absolutely horrid in its final years.

The absolute best catfish I’ve ever had was while I was a Scout back in the early 80’s. During a camping trip on the Dog River in Douglas County and we caught our own supper. We took the fresh catfish, wrapped it in bacon and some butter, rolled it in tin foil and cooked it in the coals of our camp fire. To my memory there has never been better fish

I have to concur on Catfish Jim’s in Kennesaw. It is good but GG’s on Hwy 92 in Woodstock is even better.

Gotta love catfish - but after reading all about Asian catfish(some of which is not even real catfish)I now ONLY eat true southern catfish - farm raised. It’s the ONLY catfish that is clean and safe to eat. And as it’s farmed there’s no dirty taste at all - simply delish! I always make sure it’s what I’m getting when I order in a restaurant. IB
