Favorite potato salads for July 4

Potato salads are perfect for Fourth of July picnics and cookouts, and there are a zillion different ways to make them.

I picked up a five-pound bag of freshly dug red potatoes at the Marietta Square farmers market last Saturday. Half is going to go into buttermilk-horseradish mashed potatoes this week, and half might go for potato salad next week.

What’s your favorite way to prepare potato salad?

I like eggs, mustard, a touch of mayonnaise, dill pickles and onions. My life doesn’t like onions so they usually get left out. I’ve had sweet pickles, sour cream, carrots and lots of other things in potato salad. Some have been better than others but none have been bad.

I like my potatoe salad with miracle whip, durkees sauce (a mustard sauce to give it a little sweet and tangy taste), onions, green bell pepper, boiled eggs, little salt and pepper, sweet pickle relish. Durkees will set it off.

Bobby G’s Chicago Eatery in Roswell has the best potato salad I have ever tasted. I think it has Bacon in it, which my Cardiologist would really appreciate.

Potatoe salad easy and simple to make. Can serve warm or chilled. Use new potatoes cut and cooked, scallion onions diced small, margarine, salt and pepper, ranch dressing. Mix all incredients together and serve. It’s good either hot or cold.

Use red potatoes with skins… combine Duke’s mayonnaise, country Dijon mustard, chopped green onions, dill, celery salt, and cracked black pepper to taste.

For a warm potato salad, I like it German style with new potatoes, bacon, vinegar & onion.

For a cold potato salad I love my Mama’s recipe with mayo, mustard, celery, green onions, boiled egg, sweet pickle relish and a bit of paprika on top.

On the other hand, I absolutely hate, hate, hate (Did I mention I hate) pickle juice in my potato salad.

Keep it simple.

Finely chopped celery, finely chopped fresh parsley, salt, pepper, Hellman’s (gotta have Hellman’s), and paprika for some additional color.

Dill pickles great on the side, but I never mix them in. Never the sweet ones.

For an all-american look, consider leaving the skins on the red potatoes and adding white and blue potatoes to the mix. Blue have an excellent creamy flavor and the look will get people talking. Add the blue last and mix gently - otherwise the whole mix will end up with a blue haze that won’t look as appealing.

Potatoes, mayo, mustard, sweet relish, boiled eggs, salt. Served warm or cold it is grandmaw slappin good! The ingredients are basically the same but it’s the hand of the cook that makes a difference. My mother and I use the exact same ingredients but everyone including her likes my potato salad the best. Go figure.

I just wanted to thank many of you for spelling potatoE correctly. Special kudoes for Becky, who added the apostrophe—making the potato actually own the other ingredients!

Good job!

For creamy potato salad served chilled: Red potatoes, skins on, “rustic” chopped. Dill (the herb, not the pickles — my husband hates crunchy things in his ‘tater salad). Boiled Eggs. Green onion. Mix in half mayo, half sour cream (because I’m not a huge fan of mayo) and a nice, chunky mustard. Celery seed, black pepper, kosher salt.

For a great warm or room-temp potato salad: Red potatoes, again boiled and skin on. Mix up a vinaigrette of white wine vinegar, olive oil, dijon mustard, garlic paste (freshly pressed, never from a jar), kosher salt, black pepper). Pour over hot potatoes and add some green onion. No mayo, so it’s great in the heat. Yum!!

I have a friend who uses peeled white potatoes, mayo and olives in hers (it’s her mother’s recipe), and it’s pretty tasty, as well.

Since I don’t like eggs, I make deviled eggs to put on top of the potato salad, thereby satisfying everyone. I dice the potatoes, add celery, crumbled cooked bacon, chopped scallions, and mix in a dressing made of mayo, Miracle Whip, mustard, horseradish, sweet relish, salt and pepper and a bit of milk for consistancy. YUM

Too much trouble to make but anything that is too much trouble to make is yummy! DO NOT add pickles. Awful. No eggs - worse - use either new potatoes or golden yukon. Cut potatoes not in dice but a little larger, boil just until cooked. Drain immediately. Cool slightly and then douse sparingly with Italian dressing. Chill. Then add diced celery, a few scallions, Hellmans and Durkees - you have to - mix and serve. Sprinkle paprika on top.’Enjoy. Happy Fourt Lei-Lei

Mine’s plain and simple, but with specific ingredients: potatoes, Hellmann’s, Durkees, sweet pickle relish JUICE, chopped hard-boiled egg, and salt. YUM! Has anyone ever heard of putting a pinch of brown sugar in potato salad (other than the German-style)? My friend says her grandma’s PS is the best in the world, and that’s her secret.
