Why a really good gumbo’s hard to find

When it comes to gumbo, there is only one thing everyone can agree upon: no one makes theirs the same as the next. Not only does it matter what ingredients you put into it, but, just as important, it depends upon your skill at making the roux — that flour-and-fat mixture that is cooked and stirred for what seems an eternity in a big skillet over a flame until it reaches the desired shade.
Cook it a minute too long or a degree too high and you could get those dreaded black specks of char that will turn your gumbo bitter.
Given those variables, it’s no wonder that so many gumbos fall way below the gold standard.

Ever heard of chocolate gravy?

We hadn’t — until several readers shared their stories with us as part of our ongoing Southern Recipe Restoration Project. (See story and recipe here.) But are we ever glad we have now! Basically, it’s a thin, warm, chocolate pudding that has been served for breakfast or dessert in Southern households for more than a century. It is typically poured over hot, buttered biscuits — although everyone who knows about it seems to have their own little twist or variation. We tried it — and is it ever yummy!

Dessert is back!

It’s been a long time coming, but slew of new Atlanta restaurants are making dessert a priority again. (And just in time for Valentine’s Day…. how sweet!)

Dessert can top the perfect meal or be a secret reward all its own. It can be as simple as the ice cream shop down the street or a more complex confection from your favorite restaurant.
