The fruit compote is a sweet ending to the Seder meal. Use kosher-for-Passover macaroons; the number of macaroons will vary by size, but you want to lightly cover the layers.

12-18 macaroons (about 12 ounces), crumbled

4 cups fresh or canned peaches, pears, apricots, pineapple and/or cherries (if canned, drain)

1/2 cup slivered almonds, toasted

1/4 cup kosher-for-Passover brown sugar

1/2 cup kosher-for-Passover sherry

1/4 cup melted kosher-for-Passover margarine

Preheat oven to 350 degrees. Coat a 2 1/2-quart casserole dish with kosher-for-Passover cooking spray. Cover bottom of dish with 1/4 of the crumbled macaroons. Alternate layers of fruit and crumbled macaroons, finishing with macaroons. Sprinkle with almonds, sugar and sherry. Pour melted margarine over the mixture. Bake for 30 minutes.
