Apple Matzo Kugel

Kugel is a traditional side dish, usually served at a Seder.

4 sheets of matzo

3 eggs

1/4 cup granulated sugar

1/4 cup (1/2 stick) kosher-for-Passover margarine, melted

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 apples, pared and chopped

1/2 cup chopped walnuts

1/2 cup golden raisins and/or dried fruit bits

Preheat oven to 350 degrees.

Break matzo, and soak in water until soft. Drain, but don't squeeze dry. Beat eggs with sugar, margarine, cinnamon and salt. Add matzo. Stir in chopped apples, nuts and raisins/dried fruit. Pour mixture into a casserole dish sprayed with kosher-for-Passover cooking spray. Bake for 45 minutes.
