Bittersweet Chocolate Grilled Cheese

Four thick slices challah

bread

2 tablespoons unsalted butter, softened

2 (1/4-inch-thick) slices Leerdammer or other Swiss cheese

2 ounces finely chopped bittersweet chocolate

2 to 4 thin slices unpeeled Comice pear

6 to 8 large sprigs arugula

Heat a large skillet over medium heat. Spread the four slices of bread with the unsalted butter on one side only. Place two slices of the bread, buttered side down, in the skillet. Over each slice, build a sandwich starting with the cheese, then the chocolate (use 1 ounce for each sandwich), then pear slices, then arugula. Cover each with another bread slice, buttered side up.

Grill for two minutes on each side, or until the cheese and chocolate melt and the bread is golden brown.
