Jan/Feb: World’s Easiest Homemade Lasagna. This gets double points for simplicity. To streamline the cleanup, we’ve adapted this recipe using mostly ingredients that come in pre-measured containers that can be tossed away once emptied, including no-boil lasagna and prepared pesto.
March: Pasta Italiano. You can make this mild or hot, depending on the kind of Italian sausage you like best. Add in chopped bell pepper, sliced mushrooms, the pasta of course, and diced tomatoes with garlic. Then dig in!

April: Spicy Fish Tacos. Go fish! No matter how you prepare it, you just about can’t miss with a fish taco. You can serve them fried, grilled, or as in this version, coated with a spicy seasoning blend and pan seared. Though it calls for tilapia, we tested this recipe with cod and swordfish. Serving suggestions include adding shredded cabbage or lettuce, as well as guacamole or shredded cheese.
May: Southern Fried Chicken and Sawmill Gravy from Atkins Park. Buttermilk provides a nice thick surface for the flour to cling to, providing this classic (yet boneless!) fried chicken with a dense breading. For the gravy, using bacon grease instead of butter adds flavor to the simple white sauce.
June: Spicy Shrimp and Pasta. Imagine yourself dining on the beach with this spicy pasta, fired up with Old Bay. Brew a pitcher of iced tea, and you’ve got the perfect meal to ring in the season of swimming, sunning — and sizzling heat.
July: Tomato Pie. If you like tomato and mayo sandwiches in the summer, then you?ll love this savory pie. It?s based on the same ingredients, plus a couple of “extras” — cheese and fresh basil. And it’s pretty enough to serve to company.
August: Herb Crusted Fish Fillets from Virginia Willis. Atlanta chef Virginia Willis offers a tantalizing tilapia recipe as part of EveningEdge.com’s Dinner Dare. We challenged Virginia to cook a meal in 30 minutes or less, and this was her recipe of choice.
September: Taco Mountain Watching your food budget doesn’t mean scrimping on taste or fun. This kid-tested taco dish can be made to serve any crowd, large or small. For added fiber, add black beans, or for a little spice, add sliced jalapenos. To save time, you can serve the elements buffet style and let the little munchers at your house fix their own plates.
October: Simple Shrimp and Grits Chicken sausage, green onions, garlic and oregano cooked with shrimp add up to a meal that will transport you to Charleston or Savannah — without leaving your dinner table. We used quick grits for the recipe, served in a separate bowl.
November: Coca-Cola Sloppy Joes A can of Coke adds a caramel sweetness and peppery spice to this time-honored kid-friendly dish. This Sloppy Joe mix also contains ground beef or turkey (we went with the bird), onion and barbecue sauce.
December: Seven-Layer Cookie Bars. This is not a dinner recipe. This holiday cookie recipe from Meridith Ford Goldman is both easy and easy on the eyes. She calls them the easiest cookie bars you’ll ever make.
