Moms share your favorite holiday recipes
Got a cake to die for or an appetizer that’s easy and divine. The moms of Atlanta want to know those recipes, so cough ’em up!

We’ve had bunches of requests for a day to share recipes, so here it is!
However, before we get started I need to tell you that the AJC is super picky about the recipes they generally run. They have to be tested, and they have to include all their nutrition information. So I might get into trouble since these are clearly rogue recipes. I cannot vouch for them in anyway. The AJC is not responsible for how well they turn out. Please use common sense when evaluating these recipes!
So without further ado, here are two recipes to get us started.
New Mom posted her triple chocolate cake recipe a few days ago and JJ has already adjusted it slightly and reposted. In case you missed it, here is JJ’s version of New Mom’s recipe:
1 box devils food cake mix
1 small box chocolate instant pudding
1 12 oz bag chocolate chips
1-3/4 C milk
2 eggs
Mix all ingredients together. Add the chocolate chips last, easier to stir (I stirred by hand).
Pour the mixture into a Bundt cake pan, bake at 350-degrees.
I ended up baking it 65 minutes. New Mom said to cook for 55minutes to an hour, but I ended up putting it back in for 10 minutes.
Also, her recipe did not add any vegetable oil. I ALWAYS thought you had to have oil in ALL cake recipes. I added about 1 tablespoon after it was all mixed up and in the pan. That may be why it took longer to cook.
If you serve it warm, the choc chips will be mushy. I prefer mine in the fridge for a couple of hours for the chips to harden up.
I have a super easy one to throw out too. MOMania’s fill-in host Keith told me this one yesterday on the phone. It came from her mom-friend Andi. It’s a great recipe for school parties, cookie swaps or last-minute presents.
1 bag of square pretzels
2 bags of red and white peppermint-flavored Hershey’s Kisses (I can’t find these on the Hershey’s site but Keith witnessed them with her own eyes so I guess they are being sold. But I think any small piece of chocolate would do.)
1 bag of red and green M&M’s
Cover the bottom of a brownie-type baking pan with a single layer of pretzels. Put one Kiss on top of each pretzel. Heat in a 250-degree oven until the Kiss gets mushy. You don’t want it to melt through the pretzel. You just want it to get soft. Pull them out of the oven and press one M&M on top of each Kiss. The Kiss should press down flat onto the pretzel. Let cool and it will all harden together. Keith said they were very tasty!

O.K…..since I suggested this topic I will start the ball rolling. If it ends up being a dud, I will be the one with egg on her face.
Everyone is very busy now, so some may not have time to look up recipes and contribute…we will see.
Perhaps those who cannot contribute will at least let us know if any recipes look interesting and if they plan on trying them or if no one cooks anymore and this is a dumb topic…I will apologize.
I cook a sit down dinner at least 3-4 nights per week and find that not many others are doing this anymore. As I said yesterday, I am older than dirt…LOL. My neighbor reminds my husband how lucky he is to have a hot meal on the table for dinner and not sandwiches….oh well.
I am NOT vouching for nutritional value and also know ( from traveling) that no matter what any one cooks…someone will say YUCK…I have been to places where everyone is raving about a dish and it looks awful to me. Here we go:
EASY CHERRY DUMP SALAD…we make this every year during the holidays
1 small flat can crushed pineapple 1 regular tub of cool whip topping 1 can eagle brand sweetened condensed milk 1 can Comstock cherry pie filling CHILL ALL CANS Open cans and dump into a bowl…mix very well and top with crushed pecans or walnuts…I also stir in about 1 cup of small marshmallows. …refrigerate at least 2 hour. You can also freeze this in an 8x8 pan and serve it in frozen squares….yummy.
I had this at a party last week and it is in our neighborhood cookbook, so I made it for a party that I went to:
CHEESY BACON BITES….easy and transportable: 1 8 OUNCE BRICK CREAM CHEESE 1/4 C. REAL BACON PIECES 2 TBSP CHOPPED ONION 1/4 TSP. BLACK PEPPER 1 PKG CRESCENT ROLLS

WOW, I’ve been published. WOO HOO.
I wish I had known about this topic last night. I would have pulled my recipe cards, and brought them to share.
I make a “Snickers” frozen dessert. I love it. But it takes ALL Day long to make it. You have to do it layer by layer, and refridgerate inbetween. I’ll bring it in tomorrow and post a day late.
A friend of mine does Haystacks. She takes those chinese hard noodles from the can, and puts melted chocolate on them. I’ll get that recipe too.
I can’t wait to see all the wonderful ideas!!!

FUNKY FRITO FROOKIES..
1 bag of corn chips 1 cup karo syrup 1 cup sugar 1 cup smooth peanut butter 11 1.5 oz chocolate bars
Put fritos in a 9x13 pan & flatten out (as much as possible) on medium heat combine sugar & karo syrup until hot,turn off heat, mix in peanut butter until mixture is smooth..
Pour mixture over fritos..Place the chocoalte bars over this & smooth out again..Cool & when mixture “hardens” dump out of pan & break into bite size pieces..

We do haystacks with pretzels (straight or curled) and use both white chocolate and milk chocolate as the covering.

I’m droolling over here…..
This is so fun. I’m going to print all these today, and add them to my collection. I have two receipe boxes, and numerous notebooks with recipes I have gotten off FoodNetwork.
MommaJane I cook a sit down dinner every single night, except once a week. We order out one night a week. A few of my friends do too, but the majority eat on the run. I just can’t stand eating out every night. I much prefer to cook.

Here’s another version of the pretzel thing Theresa mentioned:
1 bag of those small round pretzels
1 bag rolos
1 big bag of pecan halves
Arrange the pretzels on a cookie sheet lined w/ parchament paper. Place one rolo on each pretzel. Cook in the oven at 250 degrees for about 5-8 minutes, but not until the rolos actually melt. When they are shiny and look um…glisteny?, remove from oven and immediately smoosh a pecan half over the rolo, causing the chocolately-caramel goodness to seep into the pretzel. Allow to cool (if you can) at room temperature.
My aunt made these for one of my baby showers, and I think I might have eaten them all that day ;) So be warned, if you serve them to any pregnant gals, you might have to fight for one.

OK Mr Nice Guy, after that comment, you had better post one heck of a “from-scratch” recipe! ;)
I have a recipe for a sour cream pound cake that I try to make once a year, that’s from scratch…it’s time consuming, just remembering to soften all the butter and bake the cake before the butter melts is hard around here sometimes! But it’s heavenly, I’ll post it if anyone’s interested.
But it’s good to have some tricks up your sleeves too…for the real world!

mr. nice guy…how about when my husband stops and picks up the potato salad he promised he would bring to a pot luck and then transfers it into one of our nice bowls here to take to work…is that cooking…just wonderin’ LOL Readers…please be sure share recipes where we have to milk our own cow and churn the butter too…no margarine in sticks…HAHAHA!

I also make the “turtles” that new mom just wrote about. My version is:
1 bag of square butter pretzels
1 bag of Rolos
1 bag of pecan halves
Place the pretzels onto wax paper on a cookie sheet. Place a Rolo on each pretzel. Put in the oven at 500 degrees for about 3 minutes or until just starting to melt. Place a pecan half on each Rolo and press down. I put the cookie sheet in the freezer for about 20 minutes and then store in a container.
Enjoy!
Another easy recipe I like to make is:
Peppermint Fudge
I have only found the ingredients a cake store in Morrow, GA but here it goes:
2 bags white kote wafers(white chocolate melting discs)
1 bag crushed peppermint pieces(red and green)
Melt the white chocolate in a big glass bowl in the microwave. 30 seconds at a time and stir until melted. Add the crushed peppermint bits and stir. Pour onto a wax paper covered cookie sheet and put in the freezer for 15-20 minutes. Break it up and put in a container. I make this for gifts for co-workers and friends. I have also seen this done at Easter time with purple and pink discs and yellow(lemon) bits. Delicious!!

TORTILLA ROLLS..
1 8 oz. cream cheese 1 sm. can green chiles, 7-8 slices of danish ham..
Let cream chese get to room temp. chop ham in small pieces..Mix everything together, spread onto tortilla bread..Roll tightly & chill..About 10-15 minutes before serving cut into bite size slices..
You can also add a little garlic or salt & pepper to taste with these..

Motherjanegoose…I can vouch for the cheesy bacon bites because they have become my “signature” appetizeer. I got the recipe from a cookbook years ago and made them for FIL’s birthday party. I had so many people request the recipe and now I’m required to bring them for any appetizer / cocktail party. A couple of things that I do differently is use 2 Tbls finely chopped green onion in place of the onion (I like the color & flavor better) and I cut the cresent squares into four triangles each and roll them so that they make smaller cresents. I actually think I like your pinwheel version better because it seems a little easier! :o)
Like JJ, I wish I had known were going to do this topic today so I could be prepared to contribute. My coworker gave me a bag of seasoned pecans halves yesterday that were delicious! She included the recipe but I left it at home today. I remembered that they had orange zest and dried cranberries but that’s it.
We all have to make ourselves a note to check back tomorrow to see what else has been added!

Here is one of my favorite desserts to make. I had to go get it from the web, since my recipe is at home. Anyone here use Taste of Home cooking magazines? The majority of my recipes have come from that publication.
Anyway, here you go….
FROZEN PEPPERMINT DELIGHT
1 package (14 oz) creamed filled chocolate sandwich cookies (crushed). (I use Oreos…)
1/2 cup butter, melted
1 gallon peppermint ice cream, slightly softened* (If you cannot find peppermint ice cream, buy vanilla, and a bag of candy canes. Crush the candy canes up and mix with the ice cream).
1 carton (12 oz) frozen whipped topping, thawed
1 jar hot fudge ice cream topping, warmed
Crused candy canes, or peppermint candies.
In a bowl, combine cookie crumbs and butter. Press into an ungreased 13 x 9 inch dish. Spread ice cream over crust; top with whipped topping. Cover and freeze until solid. May be frozen for up to 2 months.
Just before serving, drizzle with hot fudge topping, and sprinkle with peppermint candy.
I usually make this a day in advance so it has time to harden up. I’ve made it the day of an event, but it isn’t firm enough when you go to serve it.
This is also very good in the summer when it’s hot outside. Definately a crowd pleaser.

I was in Madison, Ga last week ( loved it) and so many of those antique stores had the older ladie’s church cook books.( from the 1960’s)…a friend mentioned to me that those books are so much harder to use as they did not even have microwaves back then or even perhaps whipped topping!
Mr. Nice Guy…do you own a microwave…as that is not real cooking…haha! Ladies…let’s go out and chop us some wood like real women to start a fire in the oven.
FYI…if I had to cook without a microwave we WOULD be eating sandwiches for dinner….ditto for the crock pot.
My daughter makes this recipe and it is perfect with ham or pork chops…great for pre teen and teen cooks.
I am sending it in columns but if it messes up, I am sorry…what am I doing wrong?
JIFFY CORN CASSEROLE
1 can whole kernel corn, drained
1 can creamed corn
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 c. oil)
1 c. sour cream
1/4 - 1/2 tsp. garlic powder (opt.)
Shredded cheese (opt.)
Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9”x13” baking dish for 30 to 45 minutes or until fully cooked in center.

NewMom That is so much fun to make. My daughter loves crushing up the candy canes. She puts them in a baggie, and takes them out on the deck and uses a hammer to crush them up. ha ha

Just tried this one the other day, it was a hit…
Chicken Pot Pie
1 can cream of mushroom soup
1 can cream of chicken soup
Any veggies (I threw in some sweet peas and corn)
Shredded chicken
Crescent rolls
Add all the ingredients, except the crescent rolls to a greased casserole dish. Bake at 350 for about 30 minutes. Top with the crescent roll dough and bake another 15 minutes or so until the top is crispy-looking.
A wonderful meal when it actually gets cold outside again!

You mentioning crescent rolls reminded me of something I did the other day, I browned some breakfast sausage, crumbled it, and then unrolled some crescent rolls. I added the sausage to the crescents, andded some shredded cheese, and rolled them up (instead of pulling them apart to make rolls). Then I rolled up the crescents with the sausage inside, let it cool in the fridge, then sliced them and baked them off in the oven for about 10-12 minutes, or long enough for the rolls to cook through. I plan to make these for Christmas breakfast, but do all the prep the day before, then bake them that morning.
I made this variation from a recipe a former co-worker would make for breakfast parties (which I have since found in the paula deen Christmas book) You take crescent rolls and actually spread the raw sausage in them, then roll back up and slice & bake. I have NOT made these, but apparently the sausage cooks thoroughly. But please make sure, I don’t want anyone getting sick and blaming New Mom! :D

Here is a great appetizer that is good anytime of the year, but I love it now because of the red and green colors. It is very yummy!!
Black-eyed Pea Salsa Ingredients: 2 cans black-eyed peas (drained and rinsed) 1 can diced tomatoes (drained and rinsed) 3 or 4 green onions, diced 1 bunch of cilantro (just the leafy parts, chopped) 1/2 jalapeno pepper, finely chopped 4 tbs balsamic vinegar 2 1/2 tbs sugar 1/4 tsp salt 1/3 cup olive oil
Mix BEP, tomatoes, cilantro, onions and jalapeno pepper in a bowl. Set aside.
Mix salt, sugar, vinegar together then add oil. Pour over the BEP mixture. Chill for a couple of hours. Serve with tortilla chips.
I have some other yummy recipes I will submit later. Gotta go party at preschool with Little E.

XMAS HAYSTACKS
Melt 2 bags chocolate and 2 bags of butterscotch morsels. Stir in 1 16oz jar of dry roasted peanuts Stir in 1 can of dried chinese noodles Dollop on to cookie tin and put in fridge for 20 minutes.

Purchase a large, high quality rack of lamb Remove the thick fat French the rack of lamb Heavily coat with Kosher Salt and fresh ground pepper
COATING: 2 Tbls Grainy Mustard 2 Tbls Dijon Mustard 2 Tbls Any type of mustard 2 Tbls Fresh Squeezed Lemon Juice Add fresh, chopped Rosemary and Garlic Salt & Pepper Mix
Pre-Heat oven to 400: Pre-heat an iron skillet making it very hot Add oil, sear meat 2 minutes each side Heavily brush coating over both sides of meat Cook in oven 20 – 22 minutes Let rest and cover for 10 minutes Manga

Very simple, Very Good…..
ROASTED PORTOBELLA MUSHROOMS
Pre-Heat oven to 500 Wash, dry the mushrooms…. Baste with butter…. Salt & Fresh Ground Pepper…..
Roast 5 minutes cap side down, baste with butter…. Flip and cook for 5 minutes cap side up…. eat!

My favorite Holiday drink is better than Egg Nog it is a wonderful concoction called Boiled Custard and you can make it….I suppose, but actually you can buy it from Kroger….it’s about the only thing I ever go inside of a dirty Kroger store for. But it is way worth it.

Thanks WTF. I am sure you are too :). Yes, I struggle as a Southerner to keep my kids off this type of food. I am just sick of death of all the obese kids. So sad. and when the kids get invited somewhere, all they get is crap food. You have to have SOME healthy options, right?

One of the bragging points I do for my wife is cook good, homemade meals - and clean up! She comes home every night and can sit in her chair, flip through magazines, watch Oprah and then I will cook, serve and clean up after a superb meal! The simple joys of life.
After shrinking 20 bras in the wash only to discover how expensive they are to replace, I have been banned from laundry for life!
Cooking wondeful meals for your wife is romantic and a turn on, especially if the food is great!

missnadine, I think the food isn’t the problem with adolscent obesity. I mean, my diet hasn’t changed much in my 30 years on this earth but the one thing that has is childrens activities. Most kids have to be ran out of the house due to Wii’s & Xboxes. Hell, when I was young I was outside running, riding bikes, etc from daylight to dark.
Another thing is everyones uber-busy lifestyles & taking the easy route out with fast food.
I do agree with you that as a nation we all need to be more aware to our eating habits, but we also must get active again.
Again, sorry I was an a#@…. All of these rainy days are screwing me up… =P

I never carry them in my purse. I am afraid that if I get stopped by the police for anything they might be considered to be “contraband”. So, I keep them in an air tight jar. Keeps them fresh. Now, honey, please put fresh linens on the bed and put on something “pretty” for me tonight. OK? The jar is in the usual place. I have the key so I will unlock the chain/padlock when I get home.

FYI.. have lived in the south for nearly 20 years but many midwesterners cannot make dinner ( a casserole) for dinner without a can of cream of _ soup and some cheese.
Get real, there is no one recipe that EVERYONE likes…if you are not interested…that is wonderful…start your own blog! It is a free country!

Even after reading some of the post today, I’ll share a treat. We’ve had these every Christmas morning since I can remember.
Sausage Cheese Balls
1 lb. bulk breakfast sausage (I use Bob Evans) 4 cups of shredded sharp cheddar cheese 4 cups of Bisquick
Incorporate all ingredients. (It’s a good work out)
Roll in to 1” balls Bake at 400 for 15 -20 mins.
We only have these once a year. Everyone loves them.

Geesh, I was out this afternoon and somehow a topic like holiday recipes can get so feisty!!
Seriously, these are not the “It’s January, time to get ready for bathing suit season” recipes. We’ll be bombarded with those next month. We don’t overindulge any time of year, but around Thanksgiving and Christmas, it’s nice to do something fun and different to share with your family. I remember that, while growing up, there were certain dishes or desserts that we had at each relatives’ house…and we came to love them, mostly because we associated them with our relatives and Christmas. Not because they were healthy! ;)
I remember one Christmas, my mom tried to make grits on Christmas morning. Bless her heart. Her parents were northern transplants, so she wasn’t raised being taught how to make them. Not only were the grits not very good, but there was a TON of them. She could have fed 20 with that one pot. Mom, if you’re reading this, you know I love you, but you also know that this is true! ;)

Here’s another recipe that is easy and always well received. But please be warned, it’s not healthy :)
BLT Dip:
1 pound bacon, cooked and crumbled
1 cup mayonnaise
1 cup sour cream
1 -2 diced tomatoes
Mix everything, adding the tomatoes just before serving. Serve w/ crackers. And if you really want the “L”, serve on a bed of lettuce. Yum

Oreo Truffles
1 8 oz. pkg softened cream cheese
1 pkg oreos
white bark or white chocolate
Pulverize Oreos in food processor until it resembles dirt! Dump into bowl and add softened cream cheese. Mix thoroughly. Roll into mini balls (about 1/2 size of a golf ball) and place on cookie sheet. Pop truffles in fridge for 1 hour to harden. Melt bark or chocolate in microwave or on stove. When chocolate has melted, dip truffles into melted chocolate and place them on wire rack to dry. Voila! And NO they are not healthy but they are delicious!

That reminds me of another easy recipe. Don’t know if there’s a name for them. And it probably doesn’t count as cooking though…ha ha
Start w/ a pack of refrigerated place and bake chocolate chip cookies. Separate and smoosh (technical term) each cookie out, and place it in a standard-size muffin tin, forming it up the sides of the cup. Then place an unwrapped reese’s cup (the mini-cups, not the big ones!) in the middle of each cookie. Something wonderful happens in the oven, somehow it becomes a new entity…a chocolately-cookie-peanut-buttery bite of goodness. I don’t remember how long to bake, probably the baking directions on the dough package. Long enough for the cookie to bake through. enjoy!

There is a way to make things good and heathy. Look at New Mom’s recipe. Change it to this:
BLT Dip:
1 pound TURKEY bacon, cooked and crumbled
1 cup LIGHT mayonnaise
1 cup LIGHT sour cream
1 -2 diced tomatoes
I’ll bet it is just as good, with 1/2 the calories and fat. Same with the sausage balls. Subtiture with a light Jimmy Dean’s sausage and 2% cheese.
Good food doesn’t ahve to be loaded in fat, and CAN taste good, and doesn’t have to make you or your kids too fat.
I agree we all have to let loose sometimes, but why be so loose that you’ll feel like crap a week later when you’ve gained 10 pounds over the holidays?

I personally don’t like the taste of all of the light/fat free stuff, especially when it’s not cooked into something. But I rarely make things like this, rarely eat mayo or sour cream, and when this dish is served, 12+ people nibble from it and there’s always tons left over.
I think if you ALWAYS eat like this, you’ve got a problem. But for me, the holidays are a time to try and enjoy recipes as they were meant to be. And I’ve never gained weight over the holidays or feel like crap afterwards. But then again, I don’t eat a ton and watch what I eat.

One year I tried to make our favorite sour cream pound cake with light sour cream and low-fat margarine. I remember not telling anyone, thinking ‘they will never know how much healthier it is!’.
Well, that Christmas, people only ate half a slice, and never said anything about it. (usually people go crazy over this pound cake!) So, instead of everyone enjoying their one slice of pound cake once a year, they didn’t, all because I thought I would make it healthy.
I’m not by any means saying that you shouldn’t watch what you eat and be healthy, I just don’t think it’s necessary to make everything you serve at Christmas be “healthy”. Just don’t make a piggy out of yourself, and just try a little of everything. All about moderation…

Now, if you are looking for an indulgent dip, try this, also not healthy, but I substitute some of the items, so I will add the options in brackets.
Hoagie Dip
1/2 pound cooked ham, thinly sliced 1/2 pound Genoa salami (or turkey salami), thinly sliced 1 pound processed American cheese, sliced (or 2% shredded, any kind) 2 cups mayonnaise (light) 2 teaspoons dried oregano 1 onion, chopped 1/2 head iceberg lettuce, shredded 2 tomatoes, diced 12 hoagie rolls, torn into pieces for dipping (I like the whole wheat)
Your family will love this. Both versions are good, but to me, the “lighter” version is just fine :).

Here’s the recipe I mentioned yesterday for the pecans. It looks like she may have clipped this one from the ajc but I’m not sure how long ago.
Toasted Orange Pecans With Cranberries
1/2 cup granulated sugar Zest of 1 orange 1/2 tsp salt Pinch ground cinnamon 1 egg white 3 cups pecan halves 1/2 cup dried sweetened cranberries (aka Craisins)
Preheat oven to 325. In small bowl, combine sugar, orange zest, salt & cinnamon. Rub dry mixture through fingers to release the oil from the orange zest throughout sugar. In a large bowl, whisk egg white until frothy. Add the pecans & toss to coat. Add dry mixture & toss thoroughly. Spread the pecans in a single layer on a foil lined cookie sheet. Bake 15-20 minutes or until toasted and crispy. Immediately loosen the pecans and break apart any clumps. Stir in the cranberries. Cool completely and enjoy! Store leftovers in an airtight container.

I hate velveeta but even I eat this:
2lbs Velvetta
1 can Rotel w/ chilis
1 lb. ground beef (I use Chuck)
1/2 lb Mild Sauage (Like TN Pride or Jimmy Dean the roll that is 2/$5 on sale)
1/2 lb Hot Sauage (same stuff JD Or TN Pride)
Cook the meats (separate pan for pork and beef) and drain well.
Melt velveeeta with Rotel (Nuke or Stove top)…Combine in large bowl with cooked meats.
The kids don’t do spicy well yet. So I usually do 1 lb mild sausage and skip the hot. I notice a difference. However I never have to throw any away this stuff is scooped up quick.
I like it with Fritos or Tostidos. However I have had it on baked potatoes and veggies too and its good.

Here’s a quick soup recipe that my kids love.
Hamburger Soup
1-2 lbs hamburger 2 cans whole tomatoes crushed 2 cans pork n beans 1 onion 2 cups water
Brown the ground beef and onions. Leave just a little meat drippings in the pan for flavor. Add tomatoes, water & black pepper. Bring to a boil and let simmer 20 mins. Add pork n beans and return to slight boil. Let simmer for another 20 mins and enjoy.

I have a zillion recipes, but I’m too busy cooking them to write ‘em down! But an easy, easy one is Chocolate & Caramel Pretzels.
Use the small square pretzels (THIS IS IMPORTANT — the space in the regular small pretzels is too big.) Place them about an inch apart on a cookie sheet, preferably one that has been lined with parchment or non-stick aluminum foil. Unwrap and place one Rollo candy on each pretzel. Place in 325 degree oven for 5-7 minutes, until candy has softened. Remove from oven, use spoon to gently smuch candy into pretzel, allow to cool. Yummy!

I call this Betty-Lou’s Coffee Punch (she gave me the recipe)
Tastes better than a frappacino!
Bring water & sugar to boil in saucepan. Stir in coffee to dissolve, add vanilla.
Refrigerate overnight or for days til ready to use. (I’ve> frozen it too, it thawed overnight and was just fine.)
In punchbowl, chop ice cream, pour coffee syrup over, add milk. It’s ready to serve!

Hi, this is good as well, and makes a cute gift if you are trying to save $$. Get a log of goat cheese (plain), or a log of brie (they sell brie logs at Trader Joes’). Spread some honey over it, and then roll it in come crushed dried cranberries or cherry and nuts (pistachios will make this very festive.) Freeze for a bit and wrap in festive saran wrap. And oh, they do make a 2% version of goat cheese :)

LOL!!! I absolutely HATE shopping!!!! I have to drive right by the mall 3 days a week taking my son to wrestling practice and the traffic is horrible! I will be glad when Santa finally comes. So whatchya cooking me this evening? =P
