Vidalia’s Favorite Onion Dip

Makes 6 1/2 cups

This recipe once won the grand prize for Ruth Underwood at the Vidalia Onion Festival . Before she started competing, she served as a judge in the cook-off. One year it was televised, and she had to keep smiling while she struggled through a foul-tasting ginger onion cookie. “It had too much ginger,” she says. “It wasn’t the onion’s fault.” It never is in Vidalia.

###Ingredients:

3 cups chopped Vidalia onion

3 cups shredded Swiss cheese

2 1/2 cups mayonnaise

Garlic salt to taste

###Instructions:

Preheat oven to 350 degrees. Mix all ingredients and pour into greased 1 1/2-quart baking dish. Bake in preheated oven until lightly brown, about 30-40 minutes. Serve with corn chips.

Per 1-tablespoon serving: 40 calories, 4 grams fat, 5 milligrams cholesterol, 30 milligrams sodium.
