Baked Hush Puppies

We didn’t expect these healthier versions of the traditional deep-fried favoritec reated by Ebony magazine to be a satisfactory substitute — yet in fact, they are downright delicious!
Makes 2 dozen
Hands on: 10 minutes Total time: 20 minutes
##Ingredients:
Vegetable cooking spray
2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt (optional)
1/2 cup finely chopped onion
1/3 cup skim milk
1 tablespoon vegetable oil
1 tablespoon chopped parsley
1/8 teaspoon pepper
2 egg whites, beaten
##Instructions:
Grease two 12-cup miniature muffin tins; set aside. Combine cornmeal, flour, baking powder and salt in medium bowl, make a well in center of mixture. Combine onion, milk, vegetable oil, parsley, pepper and egg whites; add to dry ingredients, stirring just until moistened. Spoon 1 tablespoon batter per hush puppy into prepared muffin pans. Bake in preheated 450-degree oven for 10 minutes or until lightly browned. Remove from pans immediately.
Per hush puppy: 27 calories, less than 1 gram fat, trace of cholesterol, 35 milligrams sodium.

Made these yesterday. Were really only good staight out of the oven. They were dry. Neat idea, but gosh, old fashioned hushpuppies are great as is. Why mess with a good thing?
