Marinated Vidalia Sweet Onions

Makes 4 cups

Preparation time: 10 minutes

Total time: 10 minutes, plus 24 hours to chill

Bland Farms near Glennville is the largest grower of Vidalia onions. The Blands are the people who put Vidalia onion ads in The New Yorker and erect 1-800-VIDALIA billboards (800-843-2542) on the interstates. They also print booklets like the one with this dish.

Ingredients:

4 Vidalia onions, peeled and sliced

1/2 cup granulated sugar, or to taste

3/4 cup vegetable oil

1/4 cup vinegar

1/2 teaspoon salt

1/8 teaspoon cracked black pepper

Instructions:

In a medium bowl, combine the onions, sugar, oil, vinegar, salt and pepper. Cover and refrigerate at least 24 hours, stirring occasionally. Good with steak and in sandwiches. You may add cucumbers and carrots.

Per 1/2-cup serving: 81 calories, 5 grams fat, no cholesterol, 105 milligrams sodium.
