Even holiday revelers who don't care for traditional eggnog may enjoy this dairy-free version, which is very light and flavorful.

4 cups soy milk

6 ounces Mori-Nu silken tofu, extra-firm style

6 tablespoons maple syrup

1/4 cup amaretto, Southern Comfort, brandy or rum

2 teaspoons vanilla extract

1 1/2 teaspoons cinnamon

1/2 teaspoon cardamom

1/4 teaspoon nutmeg

1/4 teaspoon ground cloves

In a blender, combine soy milk, tofu, maple syrup, amaretto, vanilla, cinnamon, cardamom, nutmeg and cloves; blend until smooth. Chill at least 1 hour before serving to allow flavors to blend. — From www.veganchef.com

Variation: For a thicker, sweeter nog, double or triple the amount of tofu and add 2 tablespoons lightly packed brown sugar.

Per serving: 101 calories (percent of calories from fat, 27), 5 grams protein, 14 grams carbohydrates, 2 grams fiber, 3 grams fat (trace saturated fat), no cholesterol, 24 milligrams sodium.
