Tester's notes: This unusual but tasty stuffing is cooked on the stovetop and has no bread or filler. For additional flavor, contributor Kathya Morales Singh writes, "My father, who has been making this recipe for as long as I can remember, always adds . . . one Italian sausage (casing removed) and some chopped uncooked bacon along with the three meats; he adds a handful of raisins with the remaining ingredients. The raisins give it a hint of sweetness that is very typical of Latin meat dishes." To grind ham, buy packaged cubed ham or get one thick slice from the deli and cube it. Pulse in the food processor until finely minced. You can stuff the turkey with it prior to baking or serve the meat stuffing on the side.
1/4 cup extra-virgin olive oil
1 onion, chopped
1 green bell pepper, chopped
3 large cloves garlic, minced
1/2 pound ground beef
1/2 pound ground pork
1/4 pound ground ham
3/4 cup capers
1/2 cup tomato sauce
1/4 cup white wine
1/2 teaspoon salt
1/8 teaspoon black pepper
In a large skillet over medium-high heat, add oil. Saut? onion, green pepper and garlic until softened. Add ground beef, pork and ham and saut?, breaking up any clumps, until browned. Add capers, tomato sauce, wine, salt and pepper and simmer, uncovered, for 20 minutes, stirring occasionally.
Per serving: 270 calories (percent of calories from fat, 75), 13 grams protein, 4 grams carbohydrates, 1 gram fiber, 22 grams fat (7 grams saturated), 53 milligrams cholesterol, 565 milligrams sodium.
