Cranberry-Apple-Orange Relish

This recipe's secret is in using great navel oranges and making sure the relish is sweet enough. The recipe is easily doubled and can be frozen.

1 large navel orange, segmented

1 large apple, cored and quartered, peel on

1 bag fresh cranberries

1 cup granulated sugar

1/4 cup Grand Marnier (optional)

Zest of above orange

Zest the orange before segmenting. In food processor, process the orange, apple and cranberries until coarse. Transfer the mixture to a medium mixing bowl and add the sugar, Grand Marnier and orange zest. Refrigerate until use.

Per serving: 68 calories (percent of calories from fat, 1), trace protein, 18 grams carbohydrates, 1 gram fiber, trace fat (no saturated fat), no cholesterol, trace sodium.
