Proof of the Pudding kiosks do well in sales

Longtime Atlanta catering company, Proof of the Pudding, says its three new kiosks at Hartsfield-Jackson International Airport are exceeding its sales expectations with vegetarian and heart-healthy meals.

Two of the kiosks, which opened in May, are on Concourse A at gates 18 and 28, and the other is on Concourse B near gate 10. The menu is heavy on heart-healthy vegetables, fish and lean meat, such as a roasted turkey sandwich with balsamic onion marmalade with yellow peppers on multi-rye bread or a chicken wrap with tomato, guacamole and Monterey pepper jack cheese. The kiosks also have Rachel’s brand yogurts, snack bars and Kashi cereal bowls with soy or organic milk.
The catering company developed the menu to fit into a diet of less than 2,000 calories a day.
“People really appreciate the fact that it’s healthy and goes a step beyond just a ham sandwich,” said LeMonica Hakeem, a spokeswoman for Concessions International, which operates the kiosks.
