Evolution

Hi, Everybody,
Two weeks into February and there is definite evidence of an evolving healthy lifestyle.
…going straight for The Sports Authority ad in Sunday’s AJC
…knowing the location, hours and staff of two workout facilities
…the scale is no longer buried in the closet under my shoes
…my husband, the carnivore, requested vegetable lasagna for dinner and gleefully plucked the last box of whole wheat noodles from the shelf at the market.
Never having actually made lasagna, but having plenty of firsthand knowledge of eating it, I began mixing and layering; those beautiful whole wheat noodles, fresh yellow squash and zucchini, portabella mushrooms, thickly sliced, and red onion with just enough zing to bring a tear. In between, I added part skim ricotta, low fat mozzarella and a cup of Newman’s Own Pesto/Tomato Sauce. It had a little sugar in it but much less than the others I looked at. Next time maybe I will try to make my own. I attempted to buy the Boca Crumbles that you mentioned in your comment, John, but the market had but an empty shelf. I used cut-up Garden Burger Patties instead….no, really….it sounds a little yucky, but was actually delicious, and no one regretted the request for vegetable lasagna.
On another note, I went in to be weighed at the doctor’s office yesterday. Like my fellow blogger Drew, they have one of the fancy scales that measures body fat, muscle, water, etc. I am another six pounds lighter and my body fat is down over three points. Should be “yippee”, right? Well, they said that my muscle is not increasing proportionately and that means that I am not eating enough!!
I am going to have to ponder this a bit. It’s all about balance and I apparently have a ways to go to achieve congruity.

Joye, Congrats on the weight loss and body fat loss. I too have had the same issue with muscle mass but I am working on that (a bit frightening to see the pounds increase after all the weight loss but doctor said that is normal. Mw waist size has not increased. Yeah!) Anyway keep it going. You go girl!!
