Eating green vs. eating vegetarian: Kate Geagan’s top tips

Fit to Eat columnist Chris Rosenbloom interviewed dietitian Kate Geagan about American eating habits. She asked Geagan for her top three tips for consumers to go green:
The answer:
1: Eat more plants and cut down on beef and dairy. You don’t have to give up beef or dairy, but by eating meatless one day a week you can improve the environment and do something good for your health.
2: Eat less food product and eat more food. Highly processed packaged foods consume valuable resources and they are usually not very healthful.
3: Rethink your drink. Bottled beverages are heavy to ship. Consider drinking tap water instead of bottled water and rethink the diet soft drinks. Did you know it takes 2,200 fossil fuel calories to produce a one-calorie diet drink?

Wine in plastic bottles? It’s happening

AJC Writer Shelley Emling reports that a French company is shipping wine in plastic bottles. She reports:
First there were plastic corks. Now there’s another reason for wine snobs to turn up their noses — plastic bottles.
With an eye toward shipping costs and the environment, Boisset Family Estates in France has announced it will export all its Beaujolais Nouveau to the United States this year in plastic. Other wine and champagne producers, such as Fetzer Vineyards in California, also are converting to lighter-weight packaging. Read the full story

Lean Cuisine recalls frozen chicken meals

Nestle Prepared Foods Co. is recalling about 879,565 pounds of frozen chicken meals that may contain foreign materials, the U.S. Department of Agriculture’s Food Safety and Inspection Service announced Tuesday.

John Kessler shares budget-friendly recipes on Good Day Atlanta

AJC Food writer John Kessler appeared on Fox 5’s Good Day Atlanta program to share some ideas about eating well on a budget. He demonstrated a kid-friendly recipe, Curry Rice, with chicken, Coke Pork (pork braised in Coca-Cola) and some other simple inexpensive dishes.

What’s your hardest holiday dinner challenge?

Evening Edge launched a new Dinner Dare this week from Atlanta chef Linton Hopkins, and we are now at work on the Thanksgiving Dinner Dare.
The idea of Dinner Dare is to get a chef to cook the way you do — on a tight deadline and with a modest budget. The result is a menu, with recipes, that you can make within 30 minutes. And you can ask the chef for advice.
And that got to thinking about what would be most helpful to busy cooks and busy eaters during the holiday season. Tell us your most difficult holiday dinner challenge, and if we like the question, we’ll try to find some solutions.
The challenge could be a particular food or recipe — or it could be where to find a particular food item that might be faster or cheaper to buy ready-made.
By the way, our Thanksgiving Dinner Dare will not be a 30-minute menu, but it will be on a time limit, with a modest budget, using ingredients and equipment most of us have in the kitchen.

Remember when they put coke in plastic? My grandpa refused to drink it, and would hold out for a store that still carried the glass bottles.
