How do you eat more veggies?


It’s been a good week with my trainer. I really enjoy going even though it’s hard work. I push myself at the training studio much harder than I would at home … I guess having someone standing over you telling you not to stop really helps!

Kelly (my trainer) told me to put my scale in the attic. I’m not really seeing much weight loss, and he thinks that will affect my emotions toward all this. (He’s already pegged me as highly emotional!) One of the other Fitness Challenge bloggers also wrote about her addiction to the scale. I want to see my progress from that perspective, but Kelly keeps trying to talk me out of that! Should I just “know” that I’m making progress because I’m working out regularly and getting good cardiovascular exercise?

Of course I’ve been struggling with the eating as well. I’m not trying to be 100% perfect because that would drive me nuts, but I probably could stand to make fewer “mistakes”! I really need to get more veggies in my diet. Does anyone else struggle with that? I get sick of salads pretty quickly.

Anyone have any ideas on good ways to get more veggies in?

Oh, I eat stuffed celery sticks with a wedge of lite laughing cow cheese. It is crunchy (I like to hear food!)and it is quite tasty!

When I was at my worst with Crohn’s Disease, I read several books on eating and chronic disease prevention. The common message I received was that living foods, veggies, nuts and fruits, should be the main staple of healthy diet.

I serve three veggies at each meal and choose casseroles with reduced fat cheese or soy cheese and lots and lots of veggies.

As a vegetarian I know that eating is a mind set, and you need to break the pattern of thinking about food, possibly handed down by generations, and learn to plan meals around what vegetables and whole grains you will be serving.

I searched the web for information on vegetables, when they are in season, what nutrients they provide, how to prepare them, and then plan a rainbow at each meal.

You don’t have to be a vegetarian, but it helps to read up on veggies and eventually it will stick in your brain. Veggies Rock!!

Hi Jennnifer, Onions,spinach, broccoli and tomatoes taste good on almost anything - sandwiches, bagels, eggs, toast… So, you can include veggies in every meal (even breakfast). Sauteing these veggies in a little olive oil together or separately makes a very tasty dish.
