Is Mac and Cheese the ultimate comfort food?

The recent economic news got some of us at Evening Edge talking about comfort food. For me, it starts with either Mac and Cheese or mashed potatoes. We’re looking for your guidance on where to go next in the list.

If you were pulling together a collection of Ten Great Comfort Foods, what would be on the list. Soup? Chili? Country-fried Steak or some other gravy-smothered cholesterol-adding dish? Shepherd’s Pie maybe.

A bowl of soup, some crusty bread and a glass… or three… of good wine. This time of year I make split pea with ham, matzo ball chicken, a mean cream of mushroom and of course, French onion with a bubbly Gruyère topping. Mmmm, mmmm, good.

I say ditto to all of the food items posted except meatloaf (I’m just not a fan). If I have to choose one, it has to be a bowl of chilli with sharp cheddar & a small dollop of sour cream. A slice of fresh, warm poundcake is a very close second.

For my son, it’s a plate of cheesy spaghetti & garlic bread. My husband would probably say meatloaf with a side of mac & cheese. The second choice for both of them would probably be pancakes.

Fettuccinne in vodka cream sauce. But I prefer to be sauced on vodka while eating fettuccine.

The best comfort food is a blue cheese stuffed olive at the bottom of my martini glass. I love to curl up with one of those (along with one of my students that is working to bring up her GPA) while watching latenight cinemax

Well, I’m Cuban, so obviously, a lovely bowl of soupy, lime-and-cumin-infused black beans with rice. But I also make a burgundy chicken stew (you cook it for 8 hours on very low heat— extremely easy, believe it or not) that is falling-apart tender when done. It’s great by itself, but served over a scoop of mashed potatoes— it just doesn’t get any more comforting than that!

My ultimate comfort food would have to be the mashed potatoes and gravy from KFC. In times of “comfort” I don’t care what’s in it, that stuff gets me every time. Following it up with a biscuit covered in gravy helps.

Also, my mom’s home-cooked breakfasts, which I miss so much. Pancakes, cheesey scrambled eggs, grits, biscuits w/ sausage gravy were the norm. Mmmm…

Other comfort foods are chocolate cake (or anything ooey-gooey-chocolatey) and cheesecake.

Shepherds Pie is in my top 5, but I’d have to say baked chicken, Wide noodles, and steamed Broccoli might be the #1.

Beef Stroganoff(sp?), biscuits and gravy, fried chicken, country fried steak/chicken, lasagna, Maker’s Mark, I am not healthy. Lissa, my mom cooked those kind of breakfasts when I was young and they were fantastic as well.

My top ten are (the order depends on how I’m feeling that day). All are homemade: 1. Chicken breasts baked in mushroom soup with lemon and cajun over steamed rice. 2. Chili with sharp cheddar,oyster crackers and real beer. 3. Veg soup with corn bread. 4. Chicken noodle soup with saltines. 5. Taco fixin’s over baked potato. 6. Med-rare sirloin strip, ‘tato, aged Zin and a good movie. 7. Toast with honey p’nut butter and a banana. 8. Lemon-cajun salmon, baked potato and cheap champagne. 9. Nachos, beer and college football. 10. Fondue with good friends, good wine and good music. I’m from the ‘60’s

REAL, homemade mashed potatoes, made with sour cream, garlic, tons of butter, and salt & pepper. Serve’em HOT, with more butter inside. A volcano of buttery goodness.

OR homemade vanilla sourcream poundcake, toasted, with good vanilla ice-cream on top. YUMMMY!

Something that my parents would make us every saturday night when I was real young, that always brings me comfort even now: baked beans, cut up hot dogs, and Kraft Macaroni and Cheese mixed together in a pot. Or you can use the velveeta shells and cheese if you prefer that-(but back then it didn’t exist) Delicious!! Don’t knock it till you try it…

I like to make cobbler when it’s cold or nasty outside- peach cobbler, apple & cranberry cobbler, or whatever fruit I happen to have on hand and serve it with fresh whipped cream or Breyer’s original vanilla ice cream. In the fall I like to make dishes with apples or pumpkin- pies, breads, even pumpkin soup. It makes the house smell wonderful. I also like to make home-made Russian tea with lemons, oranges and spices such as cinnamon, cloves, and all spice. A hot cup of tea is wonderful when it is cold or rainy outside. In deep winter time (January/February), the ultimate comfort drink is hot chocolate made with real chocolate and cream. Yum!

Take ordinary canned Cream of Mushroom soup and enhance it with whole milk, lots of exotic fresh mushrooms, and a sprinkling of blue cheese crumbles. Serve it with some crusty bread right from the oven and experience heaven!

Homemade Vegetable Soup with a skillet of corn bread. Crumble a big wedge of the corn bread in a big bowl, ladle on the soup, and drop a spoonful, or two, of some good Chow Chow….PARADISE!

Back to the gyst of things - comfort foods in time of impending financial doom - pinto beans (with or without salt pork or smoked hog jowl, depending on if my vegetarian daughters are home), lots of “soup” in ‘em, cornbread crumbled up in it, chopped onion, maybe some homemade tomato “chow-chow” on the side if I’m feeling fancy. I was raised very simply and Mama used to cook 2 lbs. of pintos on Monday and we’d eat on ‘em all week. When we didn’t have cornbread, I’d spread ‘em on a piece of white bread. Still good that way even now when I can afford something more exotic. Also, fried potatoes are a comfort food around here. If we’d get some rain here in my backyard in Middle Tennessee, I’ll have turnip greens, turnips, collards, kale, mustard greens, then I’ll make some hotwater cornbread to go with ‘em. Whew. I’m hungry now.

Comfort foods are great. To me my home fried shicken with milk garvy. Real homemade mashed potatoes. My kids 9grown ask for oatmeal and tomato soup but not together. Macaroni and cheese homemade is tops as well as my homemade soups.(chicken noodle, shili, split bea, bean) But macaroni and cheese is my favorite.

When it gets cool weather, we like homemade Chili ( My Way ) And chicken dressing, with side dishes. And when all the kids come over on thanksgiving and christmas day, we have the whole works turkey and dressing, Big ole ham, assorted sides, and all kinds of desserts.
